Vegan Coconut and Cacao Protein Cookies



  • 1x cup of oat flour
  • 1x cup of rolled oats
  • 1/2 a cup of desiccated coconut
  • 1/4 of a cup of cacao nibs
  • 2x scoops of 1up Nutrition Organic Vegan Vanilla Protein
  • 2/3 of a cup of coconut oil (melted)
  • 1/2 a cup of sugar free maple syrup




  1. Preheat your oven to 180C (350F) and line a square cake/brownie tin with baking paper
  2. In a large bowl, add all ingredients and mix until well combined
  3. Roll into balls and place onto a baking tray lined with baking paper
  4. Place in the oven and cook for 12-15 mins or until golden brown
  5. Remove from the oven and allow to cool slightly before serving
