Ingredients:
- 1kg of lean Turkey mince
- 1 tablespoon of extra Virgin Olive Oil
- 2 teaspoons of minced Garlic
- 1 bag of baby Spinach
- 1 tablespoon of Tomato paste
- 1 can of diced tinned Tomatoes
- half a cup of plain Tomato Pasta sauce
- 2 tablespoons of powdered Chicken or Vegetable stock
- 500g 97% fat free cottage cheese
- 1 whole Egg
- half a cup of shredded Mozzarella (optional)
- about 5 medium Zucchinis
Method:
- Preheat your oven to 190degrees Celsius
- Cut the ends off the Zucchinis and thinly slice them length ways, lay them on some paper towel and sprinkle lightly with Salt, allow to dry out while you prepare the mince Meat mixture
- In a large fry-pan preheat the oil, once the oil is hot add the Garlic for a few seconds and then the Turkey mince
- Cook the Turkey mince until all is browned and then add the Tomato paste, Tinned Tomatoes, half of the Pasta sauce and 1 tablespoon of Chicken/Vegetable stock, allow to simmer until the sauce has thickened
- Once the sauce has thickened stir in the baby Spinach until it has cooked through and set aside to cool slightly
- Combine the cottage Cheese, Egg and 1 tablespoon of Vegetable/Chicken stock in a bowl and set aside
- To assemble the Lasagne spread the left over half of the Pasta sauce on the bottom of a baking dish, then layer Zucchini (overlapping slightly) until it fully covers the bottom of the baking dish, spoon over half of the Meat and Spinach mixture and spread evenly over the Zucchini, do the same with the cottage Cheese
- Repeat the Zucchini, Meat and cottage Cheese layering
- Sprinkle the top layer with half a cup of shredded Mozzarella
- Cover with foil and place in the preheated oven for 40mins, then take the foil off and place back in the oven for another 10mins
- Allow to cool slightly before serving
