Ingredients:

  • 600g extra lean beef mince (raw weight)
  • 400g sweet potato (raw weight)
  • 500g low fat cottage cheese
  • 2 egg white
  • 500g low fat cottage cheese
  • 200g extra light cheese 
  • 4 vine tomatoes
  • 2 tablespoons organic tomato sauce 
  • 100g mushrooms
  • 1/3 red onion
  • 1 tbsp garlic paste
  • Seasonings: Onion flakes, 1 tsp mixed herbs, sea salt, pepper

Steps:

  1. Set oven to 190°C / 375°F.
  2. Cut sweet potato into thin slices. chop up tomatoes, onions and mushrooms
  3. Mix cottage cheese with egg whites.
  4. Sauté red onions with garlic paste, then add meat, tomatoes, mushrooms, tomato sauce, Mixed herbs.
  5. Build lasagna. Add sweet potato slices, meat sauce, cottage cheese and then repeat. Top with light cheese.
  6. Bake for 45 minutes at 190°C / 375°F.
  7. Serve and Enjoy
