Protein Lemon Slice

Ingredients:

 

Base

 

  • 2x scoops of 1up Nutrition Cinnamon French Toast Whey Protein
  • 1/4 of a cup of apple sauce
  • 1x tablespoon of liquid coconut oil
  • 1x tablespoon of plain flour
  • 1x teaspoons of baking Stevia

 

Filling

 

  • 1x whole lemon (ends cut off)
  • 1/3 of a cup of lemon juice
  • 3x tablespoons of baking stevia
  • 2x whole eggs
  • 1x tablespoon of plain flour
  • 2x tablespoons of liquid coconut oil

 

Method:

 

  1. Preheat oven to 160C (325F)
  2. Oil a small loaf tin and set aside
  3. In a bowl, combine all of the ingredients for the base and mix well
  4. Press the base ingredients into the loaf tin and place in the oven for about 15mins
  5. While the base is cooking you can prepare the filling
  6. Place the whole lemon and the lemon juice in a NutriBullet or blender and blend well
  7. Add the rest of the filling ingredients to the NutriBullet and blend for about 20seconds
  8. Set aside until the base has cooked
  9. Once the base is cooked, remove from the oven
  10. Reduce the oven to 150C (300F)
  11. Pour the filling over the base and return to the oven for another 10-12mins or until the filling has stopped wobbling when you move it
  12. Let the slice cool at room temperature and then place in the fridge
  13. Top with some icing sugar and serve
