Ingredients:

  • 3 eggs
  • 1/2 cup Queen sugar-free maple syrup
  • 1 cup pumpkin puree (can substitute for sweet potato, will change the macros)
  • 2 scoops of EHPlabs OxyWhey
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 1/4 cup brown sugar
  • 1/2 tsp dried coffee granules
  • 1 tsp baking powder
  • 1/2 cup dark chocolate chips

Method:

  1. Line a brownie tin with baking paper and set aside
  2. Pre-heat your oven to 180degrees celsius
  3. Combine all ingredients in a large bowl and mix thoroughly until well combined
  4. Pour batter into a lined tin and spread evenly
  5. Place in the oven and cook for approximately 30mins (can be less if you prefer them fudgier in the centre)
  6. Cut into 12 pieces and serve either warm or cold.
  7. Enjoy!
