• 1/2 cup grated zucchini
  • 1/3 cup applesauce
  • 1 cup of water
  • 2 teaspoons vanilla extract
  • 3 tablespoons of almond meal
  • 1/2 cup of oil
  • 3/4 cup cocoa powder
  • 1 cup Quinoa flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup baking stevia or your choice of sugar (will alter macros)
  • 1/2 cup dark mini chocolate chips (optional – can use dairy free for Vegan alternative)


  1. Preheat your oven to 180degrees celsius and line or grease a square brownie tin
  2. Mix the zucchini, applesauce, water, vanilla almond meal and oil together in a large bowl and set aside
  3. In a separate bowl mix the cocoa powder, Quinoa flour, salt, baking soda, stevia and dark chocolate and mix well to ensure there are no lumps in the cocoa or the flour
  4. Add the dry ingredients to the wet mixture and mix thoroughly
  5. Pour the brownie mixture into the prepared tin and place in the oven for 20-30mins or until a skewer comes out clean
  6. Allow the brownie to cool for atleast 30mins before cutting into 12 even pieces
  7. Enjoy!
