Ingredients:
- 1/2 cup grated Zucchini
- 1/3 cup Apple sauce
- 1 cup of Water
- 2 teaspoons Vanilla extract
- 3 tablespoons of Almond meal
- 1/2 cup of Oil
- 3/4 cup Cocoa powder
- 1 cup Quinoa flour
- 1/2 tsp Salt
- 1/2 tsp Baking soda
- 3/4 cup baking Stevia or your choice of Sugar (will alter macros)
- 1/2 cup dark mini Chocolate chips (optional – can use dairy free for Vegan alternative)
Method:
- Preheat your Oven to 180degrees Celsius and line or grease a square Brownie tin
- Mix the Zucchini, Apple sauce, Water, Vanilla Almond meal and oil together in a large bowl and set aside
- In a separate bowl mix the Cocoa powder, Quinoa flour, Salt, baking soda, Stevia and dark Chocolate and mix well to ensure there are no lumps in the Cocoa or the flour
- Add the dry ingredients to the wet mixture and mix thoroughly
- Pour the Brownie mixture into the prepared tin and place in the oven for 20-30mins or until a skewer comes out clean
- Allow the Brownie to cool for atleast 30mins before cutting into 12 even pieces
