Ingredients

  • 250g of diced peaches (fresh, tinned in lite juice or frozen)
  • 2x tablespoons of Stevia
  • 1x tablespoon of cornflour
  • Sprinkle of Cinnamon
  • Sprinkle of Nutmeg
  • 1x packet of Breakfast Biscuits
  • 2x teaspoons of butter (or dairy free alternative)

*OPTIONAL

  • Can top with Coconut flavoured Greek Yoghurt

 

Method

  1. Add the peaches, stevia, cornflour, cinnamon and nutmeg into a bowl and mix well
  2. Divide the peach mixture evenly into 2 small single serve sized ramekins
  3. Crush the biscuits with a rolling pin and sprinkle evenly over the peach mixture in the ramekins
  4. Add a teaspoon of butter on the top of each
  5. Place in a preheated oven at 180C (360F) for 15-20mins or until they begin to bubble
  6. Remove from the oven and allow to cool slightly before serving
  7. Top with a tablespoon of Coconut Greek Yogurt (as a replacement of ice-cream)
