Ingredients
- For the Tart Case
- 2 cups of Almond flour
- 2x scoops of Onest Whey ISO Protein ( Discount code: RYAN)
- 1/4 of a cup of melted Coconut oil
- 2x Eggs
For the Filling
- 5x whole Eggs
- 1/2 a cup of Stevia
- 1/4 of a cup of Coconut oil
- Zest and Juice of 4 Limes
Method
- Preheat your oven to 180C (350F) and grease the bottom of your tart tin with Coconut oil
- In a large bowl add the Almond flour, Onest Whey ISO Protein, Salt, Coconut oil and Eggs
- Mix until well combined and sticky
- Pour the dough into the tart tin and press down into an even crust
- Bake in the oven for 8-10 mins until it begins to go golden brown
- Remove and let cool
- To made the filling, set a pan over medium heat. Whisk the eggs and stevia until smooth then add the Coconut oil and continue whisking
- Add the Lime juice and zest and continue cooking, whisking gently until the mixture begins to thicken
- Once the mixture thickens remove from the heat immediately and continue whisking to avoid any clumps
- Transfer the filling to the cooked tart crust and smooth evenly
- Allow to set at room temperature before serving
