Coconut Cream Protein Cookies

Ingredients:

 

  • 2 tablespoons coconut butter (not oil)
  • 2 tablespoons water
  • 2x scoops of @1upNutrition Coconut Ice-Cream Whey Protein
  • 1 tablespoon coconut flour
  • 2 teaspoons of baking stevia
  • 2 tablespoons shredded (unsweetened) coconut

 

Instructions:

 

  1. Preheat the oven to 160C (325F)
  2. Mix coconut butter and water in a medium bowl
  3. Add in the 1up Nutrition Whey Protein, coconut flour, and stevia and mix well
  4. Stir in shredded coconut
  5. Form the dough into 6 balls and place on parchment-lined baking tray
  6. Flatten each cookie (with your hand or the back of a large spoon)
  7. Bake for 4 minutes, and check to see if they are firm. If not, keep checking regularly and remove when firm
  8. Allow to cool slightly then enjoy!
