Ingredients:

  • 6x whole eggs
  • 12x pieces of 99% fat free ham
  • 50g of grated low-fat tasty cheese
  • 200g of vegetables (I used capsicum, red onion, mushroom, tomato and spring onion)
  • 1x teaspoon of SpiceYourLife Smokey BBQ Seasoning
  • salt and pepper

Method:

  1. Preheat your oven to 180C (350F)
  2. Cut up all of your vegetables to have ready
  3. Grease a muffin tin with either low fat butter or light cooking oil spray
  4. Fit one slice of ham into each of the muffin cups
  5. In a large bowl crack all of the eggs and add the SpiceYourLife Smokey BBQ Seasoning, salt and pepper and whisk
  6. Place some of your chosen vegetables into each of the muffin cups and then evenly pour the egg mixture over
  7. Top with grated low-fat tasty cheese and place in the oven for 10-13 mins (or until firm to touch and golden)
  8. Allow to cool for 5-10mins before eating
  9. Enjoy!
