Ingredients
- 250g of diced Peaches (fresh, tinned in lite juice or frozen)
- 2x tablespoons of Stevia
- 1x tablespoon of Cornflour
- Sprinkle of Cinnamon
- Sprinkle of Nutmeg
- 1x packet of Breakfast Biscuits
- 2x teaspoons of Butter (or dairy free alternative)
Optional
- Can top with Coconut flavored Greek Yogurt
Method
- Add the Peaches, Stevia, Cornflour, Cinnamon and Nutmeg into a bowl and mix well
- Divide the Peach mixture evenly into 2 small single serve sized ramekins
- Crush the biscuits with a rolling pin and sprinkle evenly over the Peach mixture in the ramekins
- Add a teaspoon of butter on the top of each
- Place in a preheated oven at 180C (360F) for 15-20mins or until they begin to bubble
- Remove from the oven and allow to cool slightly before serving
- Top with a tablespoon of Coconut Greek Yogurt (as a replacement of ice-cream)
