Ingredients:
Savoury Mince
- 700g extra lean Beef mince
- 1 tin of diced Tomatoes
- 150g frozen Vegetables – I used Peas/Corn/Capsicum
- 1 teaspoon of dried Onion flakes
- 1 teaspoon of dried Garlic granules
- 1 salt-reduced Chicken or Beef stock cube
- Extra Virgin Olive oil – for cooking
Sweet Potato
- 500g boiled or steamed Sweet potatoes
- 1/4 of a cup of Lactose-free milk
- Salt and Pepper to taste
- 50g Lactose free cheese for topping – optional
Method:
- Pre heat a non-stick fry-pan over high heat
- Add a dash of Extra-Virgin Olive oil, Beef mince, Onion flakes and Garlic granules and cook until the meat is browned
- Once the meat is browned add the tinned Tomatoes, Vegetables and stock cube, stir well and simmer and stir regularly until the sauce has thickened
- When the sauce has thickened, set aside while you prepare the Potatoes
- Mash the Sweet potatoes thoroughly
- Add the Milk, Salt and Pepper to the Potatoes and mash again to ensure well combined.
- Spoon the mince mixture into a Large ramekin or small Casserole dish and spread evenly
- Do the same with the Sweet potato mash over the mince
- Sprinkle with grated Lactose free cheese if you want, but this isn't necessary
- Place in an Oven pre-heated to 180degrees for 10-15mins until Cheese is melted or Potatoes have gone slightly golden brow Or you can set aside and heat it up when you're ready to serve
