Ingredients:

  •  2 broccoli heads
  •  50g plain flour
  • 2 whole eggs

Method:

  1. Chop up the broccoli finely and grate the stalks
  2. Boil in a large pot or pan for 5-10mins or until soft
  3. Drain thoroughly and transfer to a large bowl
  4. Into the bowl add the 50g plain flour and eggs. Season well with salt and pepper
  5. Heat a non-stick pan and add a dash of extra-virgin olive oil (this isn't necessary but does make the patties go nice and crispy)
  6. Using your hands shape the patties into balls and place in the pan, use the back of a spatula to flatten
  7. Cook for 1-2mins then flip and cook for a further 1-2mins
  8. Allow to cool slightly before eating, enjoy!
