Ingredients:
- 2 Broccoli heads
- 50g plain Flour
- 2 whole Eggs
Method:
- Chop up the Broccoli finely and grate the stalks
- Boil in a large pot or pan for 5-10mins or until soft
- Drain thoroughly and transfer to a large bowl
- Into the bowl add the 50g plain flour and Eggs. Season well with Salt and Pepper
- Heat a non-stick pan and add a dash of extra-Virgin Olive oil (this isn't necessary but does make the patties go nice and crispy)
- Using your hands shape the patties into balls and place in the pan, use the back of a spatula to flatten
- Cook for 1-2mins then flip and cook for a further 1-2mins
- Allow to cool slightly before eating
